Yamenotsuyu is our finest ceremonial grade matcha.
Suitable for everyday use, Yamenotsuyu creates a liquor with an impeccable harmony between elegant sweetness and a deep, fragrant aroma. We recommend this matcha for Usucha (traditional tea), cold brew and premium matcha lattes.
Sweet nuttiness / Light astringency / Vegetal grassy notes
Usucha (Thin Tea)
1. Sift 1.5-2g of ceremonial grade matcha into a chawan.
2. Pour 70ml of hot water (around 80°C) into the chawan.
3. Using a chasen, begin to whisk your matcha, using ‘W’ or ‘Z’-like motions until a fine foam appears.
Koicha (Thick Tea)
1. Sift 4g of ceremonial grade matcha into a chawan.
2. Pour 30ml of hot water (around 80°C) into the chawan.
3. Use the chasen to gently knead the matcha into the water without vigorous whisking.
