Usucha (Thin Tea)
1. Sift 1.5-2g of ceremonial grade matcha into a chawan.
2. Pour 70ml of hot water (around 80°C) into the chawan.
3. Using a chasen, begin to whisk your matcha, using ‘W’ or ‘Z’-like motions until a fine foam appears.
Koicha (Thick Tea)
1. Sift 4g of ceremonial grade matcha into a chawan.
2. Pour 30ml of hot water (around 80°C) into the chawan.
3. Use the chasen to gently knead the matcha into the water without vigorous whisking.
Matcha Latte
1. Sift 4g of matcha into a chawan.
2. Pour 50ml of hot water (around 80°C) into the chawan.
3. Using a chasen, whisk vigorously in a W or Z motion for about 30 seconds until a fine foam forms.
4. Use 150ml of milk for an iced matcha, or steam 200ml of milk for a hot matcha.
